Fried Potato with cheese and avocado

This is what I had for breakfast Tuesday morning. I'm not sure why I have two forks. Never mind, it's a fork and a spoon. I was having hot chocolate and peppermint schnapps. I like Peppermint.

In case you all can't tell, that is a fried potato with cheese and avocado. I enjoyed it greatly.
I was going to make it again this morning. But, for the life of me, I could not find the right potato to buy.  So, I just had left over cookies from lunch. (Yes, I had cookies for my break at work. Deal with it)
